Weeknight Beef Tacos

Any night can be taco night with the right attitude, it does not need to just be for Tuesday! Ground beef tacos are so simple to pull together during the week, and the best part is picky eaters can mix and match any toppings. Classic ground beef is a favorite in my house, but it is easy enough to change up to protein or even go full veggie (e.g., mushroom) if you prefer.

Ingredients List

  • 1 lb ground beef
  • 1 cup shredded romaine lettuce
  • 1/2 cup cup shredded mexican cheese
  • 1 cup halved cherry or grape tomatoes
  • Taco seasoning (~1/4 cup mixed with 1/2 cup water e.g., Old El Paso)
  • 1 large pack flour or corn tortillas (taco size), about 8-10 shells
  • Salsa or Chiptle aioli for serving
  • Chips for serving

Recipe: Weeknight Beef Tacos

  1. On a large platter, halve the tomatoes and chop up the romaine. Set aside.
  2. Heat a large pan on the stove, and add the ground beef. Break up with a wooden spoon. Once cooked, drain the fat.
  3. Add the taco seasoning according to directions (likely add 1/4 cup seasoning with 1/2 or 3/4 cup water).
  4. Remove pan from heat once mix is fully incorporated.Β 
  5. Serve by layering salsa/aioli spread, beef, romaine, tomatoes, and cheese – or, mix and match ingredients to your preference!

Family Tips

  • Tacos are the ultimate kid food because you can eat with your hands and decide what to include! Help your child layer in meat but let them add lettuce, tomato, or justΒ  simply a heck of a lot of cheese!
  • I also love to involve my daughter in preparation – chopping or even just hand-shredding the romaine is a great activity.
  • Any leftover can easily be added to lunches for the week (salad, bowls,Β  eggs, hash etc.!)
